Ingredients

  • 5 tablespoons olive oil (or melted butter or coconut oil)
  • 1 tablespoon maple syrup
  • 1 teaspoon apple cider vinegar
  • 1¾ cups almond flour (super fine)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8 or 8.5-inch loaf pan with parchment paper.
  2. In a bowl, lightly beat the eggs. Whisk in the oil, maple syrup, and apple cider vinegar until smooth.
  3. Mix in the almond flour, baking soda, and salt until incorporated, creating a uniform and thick batter.
  4. Transfer the batter to the loaf pan and bake for 30-35 minutes or until the top is golden.
  5. Allow the loaf to cool in the pan for 10 minutes, then remove it to a cooling rack and let it cool for an additional 20 minutes.
