Description

Perfectly boiling potatoes to create delicious potato fritters and potato cakes, this dish is versatile enough to adapt into a vegan mashed potatoes recipe or even try potatoes in air fryer for a healthier twist.


Ingredients

  • 2 lbs gold potatoes, peeled
  • 2/3 cup potato starch (or corn starch)
  • Salt and pepper to taste
  • 4 oz fontina cheese, cubed small (or mozzarella)
  • Olive oil

Instructions

  1. Start by boiling potatoes: bring a pot of water to a rolling boil.
  2. Cut the peeled potatoes into small chunks and add them to the boiling water with 1 tsp of salt. Let them cook until they’re tender enough to mash, about 10 minutes.
  3. Drain the potatoes and transfer them to a large bowl. Mash them until mostly smooth.
  4. Stir in the potato starch, salt, and pepper, mixing with your hands to form a smooth dough.
  5. For the potato patties recipe, take about 1/4 cup of the potato mixture and flatten it. Place 2-3 small cubes of cheese in the center for the cheesy stuffed potato cakes and seal it into a ball. Then, gently press it into a disc shape.
