- 2 lbs gold potatoes, peeled
- 2/3 cup potato starch (or corn starch)
- Salt and pepper to taste
- 4 oz fontina cheese, cubed small (or mozzarella)

Instructions
- Start by boiling potatoes: bring a pot of water to a rolling boil.
- Cut the peeled potatoes into small chunks and add them to the boiling water with 1 tsp of salt. Let them cook until they’re tender enough to mash, about 10 minutes.
- Drain the potatoes and transfer them to a large bowl. Mash them until mostly smooth.
- Stir in the potato starch, salt, and pepper, mixing with your hands to form a smooth dough.
- For the potato patties recipe, take about 1/4 cup of the potato mixture and flatten it. Place 2-3 small cubes of cheese in the center for the cheesy stuffed potato cakes and seal it into a ball. Then, gently press it into a disc shape.
- Heat a drizzle of olive oil in a pan over medium-high heat. Cook the potato cakes for 3-4 minutes on each side. If they brown too quickly, reduce the heat.
